A simple potato salad recipe

This traditional style potato salad recipe can be prepared before hand and therefore be ready when you return from your days adventure. Just add the mayonaisse then!

Ingredients required

· 400 g (14 oz) new or small maincrop potatoes
· 2-3 tablespoons bottled French dressing or mayonaisse

· To garnish:
· Chopped spring onions
· Fresh herbs
· Small lettuce

Equipment

· Camping stove (single burner or more)
· Saucepan
· Serving bowl
· Sharp knife

1. Wash and boil the potatoes until just cooked.
2. Peel the potatoes, then dice.
3. Mix in the French dressing or mayonaisse carefully while the potatoes are still warm.
4. Sprinkle with the chopped spring onions and fresh herbs.
5. Marinate for 30 minutes or longer and serve in a bowl lined with lettuce.
