A mushroom salad (to serve four)

Try this recipe for a mushroom salad as an interesting alternative to your usual salad.

Ingredients required

· 450 g (1 lb) mushrooms
· 1 medium onion
· 45 ml (3 tablespoons) oil
· 15 ml (1 tablespoon) chopped parsley
· 1 dill cucumber, diced
· 3 to 4 tomatoes, peeled, seeded and diced
· 60 ml (4 tablespoons) oil
· 15 ml (1 tablespoon) wine vinegar
· Salt
· Freshly ground black pepper
· Pinch sugar

Equipment

· Camping stove (single burner or more)
· Frying pan
· Mixing bowl
· Sharp knife

1. Slice the mushrooms thinly and chop the onion finely.
2. Heat 45 ml (3 tablespoons) oil in a frying pan and add the mushrooms and onions.
3. Cook for about 2 to 3 minutes to soften slightly, remove from the heat and allow to cool.
4. When the mushrooms and onions have completely cooled, add the parsley, dill cucumber and tomatoes. Mix together the oil, vinegar, sugar, salt and pepper and pour over the other ingredients.
5. Stir gently to coat evenly and allow to stand for 1 hour before serving.
