Try grilled mackerel for a healthy alternative (to serve two)

Grilled mackerel is an easy fish dish to serve.

Ingredients required

· 2 fresh mackerel weighing about 275 g (10 oz) each
· 6 large mushrooms
· Salt
· Freshly ground black pepper
· 1 tablespoon butter
· Lemon and parsley sprigs, to garnish

Equipment

· Camping stove with grill feature
· Sharp knife

1. Scale and clean the mackerel, cutting off the fins and Vandyke the tail (ie cut a “V” in the middle). Remove the head.
2. Cut three diagonal slits on each side of the fish.
3. Place on greased tin foil and grill under moderate heat for 7 minutes, then turn carefully.
4. Put seasoned mushroom caps, black side uppermost, on the tin foil and dot with butter.
5. Cook the fish until the flesh shrinks from the bone at the head end.
6. Place the fish and mushrooms on a dish, garnish with lemon wedges and the mushroom caps, black side uppermost, and small parsley sprigs.
