A fishermans stew (to serve four)

A fishermans stew may sound complicated but in reality it is very straight forward. Try to buy prepared fish so that you don't have to spend time preparing the fish by your tent.

Ingredients required

· 90 ml (6 tablespoons) olive oil
· 2 onions sliced
· 1 red pepper, seeded and sliced
· 120 g (4 oz) mushrooms, sliced
· 450 g (1 lb) canned tomatoes
· Salt
· Freshly ground black pepper
· Pinch dried thyme
· 430 ml (3/4 pint) water
· 900 g (2 lbs) white fish fillets, skinned
· 140 ml (1/4 pint) white wine
· 30 ml (3 tablespoons) chopped parsley

Equipment

· Camping stove (single burner or more)
· Saucepan
· Sharp knife

1. Heat the oil in a saucepan and add the onions.
2. Cook until they begin to look transluscent, add the pepper and cook until the vegetables are softened.
3. Add the mushrooms and tomatoes and bring to the boil.
4. Add thyme, salt, pepper and the water and simmer for about 15 minutes.
5. Add the fish and wine and cook until the fish flakes easily, after about 15 minutes.
6. Stir in the parsley.
